Amanda's MmmMm Good Mashed Red Potato Recipe
You will need:
Bag of red potatoes
Heavy Whipping Cream...
Stick Butter
Milk
Steps:
For two people I sliced up about 7 to 9 potatoes depending on size of them.
Once sliced, I put the potatoes in a pot, add water so that it covers the potatoes then add half a stick of butter along with a can of evaporated milk..(can also use regular milk). Cook on medium heat for about 45 minutes or until potatoes are super soft.
Once potatoes are done, drain! Add potatoes back to pot or put in a bowl. Add about a 1/4th cup of whipping cream, 1/2 cup of milk, remaining half of butter. Mash all ingredients together. Add salt and pepper to taste. You may need to add more milk/whipping cream depending on serving size.
Voila! Success!
Fyi... red potato skin is very healthy. Husband adds bacon bits and cheese to his. This is my way of making them. Just hoping you'll enjoy them as much as I do.
Also all my ingredients were bought at Aldis for less than $6.00!
